COOKING WITH ORGANIC FOODS

MIXED VEGETABLE/SQUASH CURRY

Ingredients:

1 ˝ cup Broccoli florets
1 Delicata squash, peeled and cut into cubes
1 bunch Kale, stems and ribs removed
1 Red Gypsy Pepper, cut into chunks
1 Gold Sweet Pepper, cut into chunks
2 TBS. Curry powder
1 can coconut milk (light works just as well)
Pinch of red pepper flakes
1 TBS. Creamy peanut butter
Salt and pepper to taste

Directions:

Chop vegetables to your liking.  Steam broccoli florets and Delicata squash pieces until almost tender.  Add kale.  Steam for 4 minutes more and set aside.  In a sauté pan, heat 1 TBS. Olive oil.  Add peppers and sauté until brightly colored.  Add coconut milk and curry powder.  Simmer for 5 minutes.  Add peanut butter and red pepper flakes and mix until blended.  Add steamed vegetables and simmer until flavors are blended.  Enjoy with crusty bread and a fresh salad.
