Whole Wheat Monsters Contributed by Lori Wyman, Organic Trade Association First make the following whole wheat bread recipe: Ingredients: 1 cup warm water 1 cup milk at room temperature 1/2 cup honey 1/4 cub of vegetable shortening or 1 stick of melted butter 2 eggs 1 Tbsp. salt 2 packages yeast 6 to 7 cups whole wheat flour In a mixing bowl with a wooden spoon by hand or a dough hook in an electric mixer: Dissolve the yeast in the warm water Add the milk, honey, oil, one of the eggs and salt Add the flour a little at a time as you mix it, keep adding the remaining flour until the dough is easy to kneed Kneed for ten minutes
Place dough into an oiled bowl and cover with a damp cloth and let rise in a warm place till doubled in size, about an hour When dough has doubled in size, turn dough onto lightly floured surface Divide the dough into four pieces Shape fun monsters that are pretty equal in size to one another
Note: You can just make "heads" or "faces" with mustaches and funny eyebrows, or make fish or pumpkins. Thinner pieces, such as legs tend to get too brown and also break off easily.
Make an egg wash by beating the second egg with a little water and paint over the surface of the monsters using a pastry brush. You can decorate with seeds or course salt also.
Let them rise until doubled Bake in at 375oF for 20 minutes
