12 medium red or green apples 12 popsicle sticks (available at kitchen supply and craft stores) 3 cups sugar 1 1/2 cups corn syrup 3/4 cup water Food coloring as needed for desired color, use red coloring for red apples and green coloring for green apples (yes you can find food coloring in natural food stores derived from natural sources)
Directions Line a cookie sheet with wax paper and brush with vegetable oil Wash and dry the apples and remove stems Insert the sticks Heat the sugar, corn syrup and water in a medium pot Stir over low heat until it comes to a gentle boil As the syrup is boiling, brush down the inner sides of the pot with a wet pastry brush to prevent crystallization of the sugar Allow the syrup to boil gently until it reaches 310°F on a candy thermometer Remove from heat and let syrup sit a moment Stir in the food coloring Dip apples in the mixture to coat, then place on baking sheet Don't try to eat until completely cooled!
